The problem
At Brooklyn Boy Bagels in Sydney, the knowledge that kept two cafés running - recipes, allergen information, stock rules, supplier procedures, how to fix the coffee machine - lived in the heads of a few senior staff. Every new hire meant hours of repeated training, and every absence meant guesswork.
What I built
- 15+ operational handbooks covering stock control, supplier management, FIFO rotation, stocktake, allergens and delivery platforms - the knowledge written down, properly, for the first time.
- Standardised SOPs for opening, closing and maintenance, adopted at both sites.
- An AI operations assistant on top of that material, so any staff member can ask a question and get the right answer from the café’s own procedures - not from the internet.
Outcome
Deployed across both cafés for 20+ staff. Onboarding got shorter, managers stopped answering the same questions every shift, and allergen and stock questions have one reliable source.
This engagement became the model for Senderikhin.
